Our Forage and Feast events follow the seasons, join us as we walk you through our special Spring Feast 2023. While the weather may not have been totally on our side, spirits were not dampened!
Head Forager and Fore Co-Founder Dan Scott leads the group around Studland on a foraging walk. He points out ingredients that will feature in the following meal. As well as other edible and medicinal plants, and the all important poisonous plants to avoid.
Arriving at our secluded feast spot, Dan shared the last few foraging tips. Furthermore he adds book and app recommendations for continuing the foraging journey beyond.
Foraged Cocktail
A welcome cocktail greets the hardy foragers- a Garden G&T featuring a homemade cleaver, nettle and rhubarb tonic. Next up a wild food demo shows them how to make foraged nettle gnocchi. With appetites whetted, the group are ready to take their seats for the spring feast!
Spring Feast Starter
A starter of a puff pastry tart with courgette, cream cheese, foraged chives and garnished with wild garlic pesto. Finally finished off with 3 cornered leek, dandelion leaves and more wild chives starts us off perfectly.
The Main Event
The spring feast continues with a main course of sea bass fillet with nettle gnocchi and sun dried tomatoes. This sits on a bed of spinach, foraged seabeet and wild garlic served with a Beurre blanc featuring fresh sorrel. In addition, it’s garnished with rock samphire and pennywort.
Our vegetarian and vegan friends are not left behind. Consequently, they enjoyed the same meal with sea bass substituted for roast artichoke, asparagus and leeks. The dairy free nettle gnocchi and Beurre blanc also featured, meaning everyone can enjoy it!
Something Sweet
For dessert, we take our twist on the classic rolo. A chocolate mousse drizzled with seaweed salted caramel. Finally, dressed with dried Dorset seaweed from @saeseaweed and freshly foraged primrose flowers. As always the meal goes down a treat with a glass of wine!
